Ultimate Breakfast Baps

A hot brekkie made compact. These breakfast baps are juicy, delicious and easy to reheat.

Ingredients

300g ground beef mince

½ tsp dried sage

½ tsp dried thyme

½ tsp onion powder

¾ tsp black pepper

¾ tsp salt

4 English muffins split in half

4 eggs

4 slices of cheese

4 slices of Grandpa’s Streaky Bacon

Instructions

Step 1

Preheat oven to 130 degrees bake. Place muffins on tray and top with cheese. Bake for 5 minutes or until cheese is melted. You can also do this in an air fryer if you prefer for 3 minutes.

 

Step 2

For the patty combine the beef mince,sage, thyme, onion powder, salt and pepper in a bowl. Divide into 4 and shape 4 palm sized patties. These will shrink slightly when cooked and we want them to end up the same size as the English muffins.

 

Step 3

Heat oil in a pan on medium to high heat.Cook the patties on each side for approx 4-5 minutes or until browned. Once cooked set aside and add 4 slices of Grandpa’s streaky bacon to the pan. Cook until golden brown.

 

Step 4

In the same pan, crack 4 eggs. If you’ve got non-stick egg rings then use these and they will come out perfectly circle ready for the muffins but if not no stress, they will still taste delicious.

Add 2 Tbsp water to the pan and cover with a lid. Cook for 1 to 2 minutes or until the egg is to your liking.

 

Step 5

Remove the warm muffins from the oven or air fryer. Top with patties, bacon, egg and lid of muffin. Add your favourite sauces for an extra flavour hit and enjoy. Tip: You can swap out your English muffin for a waffle or ciabatta!
