One Pan Enchiladas
A flavour loaded beef filling with crispy bacon to add that salty bite.

Serves: 4
Ingredients
1 tbsp olive oil
1 capsicum, chopped
1 onion, chopped
500 grams beef mince
1 tsp chilli powder, optional
1 tsp cumin
½ tsp smoked paprika
Salt and pepper
8 large flour tortillas
375 grams enchilada sauce
4 slices Grandpa’s Bacon of your choice
2 cups shredded cheese, more for sprinkling on top
1 tomato, chopped
200 grams sour cream
Italian flat-leaf parsley for garnish
Instructions
Step 1
Preheat the oven to 200 degrees.
Step 2
In a large pan over medium heat, heat the olive oil and add capsicum and onion and saute until soft. About 5 minutes. Add the beef mince to the pan and break up with a wooden spoon until the beef is no longer pink. Stir in cumin, paprika and chilli powder if using. Season with salt and pepper.
Step 3
In a separate pan on a medium to high heat, cook 4 pieces of Grandpa’s Bacon until golden brown. Allow to cool before chopping into small pieces. Set aside.
Step 4
On a flat surface, lay a large tortilla and top with the beef mince mixture. Sprinkle with cheese and bacon bits and roll up. Place into a baking tray and repeat with the remaining 7 tortillas.
Step 5
Pour the enchilada sauce over the enchiladas and top generously with the remaining cheese.
Bake in the oven for 20 minutes.
Step 6
Serve the enchiladas warm with chopped tomato and sour cream on the side. Garnish with Italian flat-leaf parsley.
