Easy Mac and Cheese with Bacon
A tasty twist on a classic the whole family will love.


250 g macaroni
50 g butter
1 small onion, diced
4 rashers of Grandpa's middle bacon, chopped into pieces
1 tsp dijon mustard
¼ c flour
2 cups milk
2 cups tasty cheese
Salt and pepper to taste
2 Tbsp chopped parsley
Step 1
Preheat the oven to 180 degrees celsius.
Step 2
Cook the macaroni in boiling water as per instructions. Meanwhile, melt the butter in a medium pot. Add the onion and bacon and cook for approximately 4 minutes to soften. Stir through the mustard then add the flour. Cook for a further 2 minutes. Gradually add the milk, stirring constantly to combine. Bring to a simmer and cook until thickened.
Step 3
Add the salt, pepper, 1 ½ cups of cheese and half the parsley.
Step 4
Transfer to an ovenproof dish and top with the remaining parsley and cheese. Cook for approximately 20 minutes or until golden brown.
