Super Fluffy Sunday Pancakes

Look no further for the perfect Sunday breakfast than these delicious fluffy pancakes accompanied with crispylicious Grandpa’s bacon.

Prep time: 15 minutes

Serves: 4

Ingredients

2 cups all-purpose plain flour

¼ cup sugar

4 tsp baking powder

¼ tsp baking soda

½ tsp salt

1 ¾ cups milk

60 grams butter (melted)

2 tsp vanilla essence

1 large egg

250 grams Grandpa’s Streaky Bacon

Maple syrup

Instructions

Step 1

Combine together the flour, sugar, baking powder, baking soda and salt in a large bowl. Make a well in the centre and add in the milk, slightly cooled melted butter, vanilla and egg.

Step 2

Using a whisk, mix the wet ingredients together in the well before incorporating the dry ingredients. If your batter looks a bit thick, add a little more milk (2 Tbs) until smooth. Set aside.

Step 3

Heat a non-stick fry pan to medium heat. Add a bit of butter to the pan before pouring a ¼ cup of pancake batter into the pan. When bubbles start appearing it is time to flip. The underside should now be nice and golden. Repeat with the remaining batter until all pancakes are cooked.  Cover the pancakes with tin foil to keep them nice and warm while you cook the bacon.

Step 4

Keep the non-stick fry pan running at a medium heat and add Grandpa’s streaky bacon. Cook until crispy and golden.

Step 5

Serve pancakes and bacon with butter and maple syrup and enjoy.
