Easy Potato Dumplings with Bacon
Delicious bite-sized morsels perfect for a side dish or family lunch.

Serves: 4-6
Ingredients
8 large potatoes
2 eggs
1 cup all-purpose flour
½ tsp black pepper
½ tsp salt
8 slices Grandpa’s Honey and CinnamonInfused Bacon
40 grams melted butter
Instructions
Step 1
Peel and cube the potatoes. Place in a large saucepan with enough water to cover. Bring to a boil then reduce heat to a simmer and cook for approximately 12 to 15 minutes or until tender. Drainwell in a colander, return to a bowl and mash thoroughly. Set aside to cool.
Step 2
In a large bowl, combine the beaten eggs, cooled mashed potato, flour, salt and pepper. Stir together until the mixture forms a heavy dough. If the dough is too wet add a little more flour.
Step 3
Shape the potato into 8 large dumplings.
Step 4
Bring a large saucepan of salted water to a boil. Gently drop the dumplings into the boiling water and cook for 10 minutes or until the dumplings float to the surface.
Step 5
While the dumplings are cooking, heat a non-stick fry pan to a medium to high heat and add 8 slices of Grandpa’s Honey and Cinnamon Infused Bacon. Cook until crispy. Once slightly cooled, roughly chop.
Step 6
Once dumplings have cooked, remove with a slotted spoon.
Step 7
Transfer the dumplings to a serving plate, drizzle melted butter and top with chopped bacon.
