Caesar Salad with Bacon
Add bacon to your traditional Caesar salad to give it extra flavour and crunch.

Ingredients
2 Tbs olive oil
1 Tbs cup lemon juice
1 tsp dijon mustard
black pepper
1 large romaine lettuce
4 strips of Grandpa’s bacon of yourchoice
1/8 cup shredded parmesan cheese
4 slices of ciabatta bread
Instructions
Step 1
For the dressing, in a small bowl, whisk the olive oil, lemon juice, dijon mustard and black pepper together.
Step 2
In a non-stick fry pan over medium heat,add 4 strips of Grandpa’s bacon. Cook until crispy and golden. Once cooled slightly, chop into 1cm size pieces.
Step 3
Grab your slices of ciabatta and brush them generously with olive oil and place them face down in the pan. Flip them over once they are golden brown.
Step 4
Shred the romaine lettuce and add to a serving bowl. Add the chopped bacon. Drizzle with 3/4‘s of the dressing and toss to coat.
Step 5
Sprinkle with parmesan cheese and drizzle the remaining dressing on top. Serve with toasted ciabatta and enjoy.
