Bacon and Vege Omelette

Super healthy, delicious and loaded with vegetables for a nutritious start to the day.

Prep time: 10 minutes

Serves: 1-2

Ingredients

3 eggs

2 tbsp milk

Salt and pepper to taste

1 small onion, chopped

1 medium tomato, chopped

¼ cup shredded cheese

3 slices Grandpa’s Bacon or Ham of choice

3 cups spinach

Mixed sesame seeds for serving

Instructions

Step 1

In a small bowl, whisk together eggs, milk, salt and pepper. Set aside.

 

Step 2

If using bacon, in a hot pan, cook 3 slices of Grandpa’s bacon until golden brown. Once cooled, roughly chop and set aside.

 

Step 3

In the same pan, saute the chopped onion for 3 minutes. Add tomatoes and cook for a further minute. Remove sauteed vegetables and set aside.

 

Step 4

Add the eggs to the pan. They should immediately start to curl at the sides. Once the eggs begin to cook through, add the cheese and return the sauteed vegetables and bacon or ham back to the pan. Fold the omelette in half and cook for a further minute. While the omelette is still cooking, add the spinach to the other side of the pan and let it warm and wilt.

 

Step 4

Transfer the omelette to a serving plate and side with the warm spinach leaves. Top with mixed sesame seeds and enjoy.
