Authentic Carbonara

A spaghetti carbonara is a failsafe classic. Experience the real taste of Italy made tastier with Grandpa’s Bacon.

Serves: 4

Ingredients

350 grams spaghetti

200 grams Grandpa’s Streaky Bacon

4 large eggs

100 grams of parmesan cheese plus more toserve

Ground black pepper

Instructions

Step 1

First boil the salted water for the pasta in a large saucepan.  

 

Step 2

Cut the bacon into small pieces and cook in a hot pan for about 3 minutes. Stir occasionally so it cooks evenly. Reserve any bacon fat in the pan.

 

Step 3

In a bowl add the eggs and parmesan cheese. Add black pepper and whisk until you have a creamy sauce. Set aside.

 

Step 4

The salted water should now be boiled.Hold the spaghetti vertically and drop into the water. As they soften, use a fork to help them sink in. Cook the spaghetti al dente or following the instructions on the package.  

 

Step 5

Using a slotted spoon, drain the spaghetti and place in the pan with the bacon. Reserve 2 tbs pasta water. Pourthe creamy egg sauce on top of the pasta. Make sure the pan is off as we don’t want to cook the eggs in the sauce. Stir constantly and add reserved pasta water to the pan. This should loosen up the sauce.

 

Step 6

Serve pasta in a nest on a plate with the bacon and add more grated parmesan and black pepper. You can also choose to add an extra egg yolk on top when serving to make it extra creamy.
